Cugna or Cògna is a typical Piedmontese autumn recipe, made with grape must, cooked for a very long time, and the typical autumnal products that our grandmothers grow in the garden, such as Madernassa pears, quinces, figs and roast hazelnuts. It is perfect with cheese (excellent with mature goat's milk cheese) and boiled meats.
