Zabajone or San Bajon. This particular name comes to us from the Saint Pascual Baylòn Yubero, a Franciscan monk who, in the second half of the 16th century, in a church in Turin, tried to care for and provide sustenance to children and the elderly by giving them eggs beaten with sugar and a drop of Marsala wine. Antica Dispensa presents it in the more modern and lighter version, made with Moscato wine.
Perfect paired with cornmeal biscuits or cakes and biscuits made with hazelnuts.
Ingredients: 42% Piedmontese Moscato DOC wine, sugar, 20% pasteurised egg yolk, cream, corn starch milk and vanillin.
